PHILOSOPHY
As cru-location in the Languedoc with own AOC Appelation in the future, La Clape is a terroir of great potentials.
For this reason we have made high demands on the fostering of the vines and the renovation and rebuilding of our wine cellar. Therefore the quantity of our production has been restricted to a very low value of only 30 hl/ha. Through our intense fostering and continuous selection of the vines only the best grapes ripen to become a wine of Moyau. In the course of our quality offensive nearly all technical facilities and tanks as well as the complete machinery have been modernised and expanded. Moyau has now a capacity of approximately 1500 hl producing tanks and further 1500 hl additional capacities (ancien caveau) that will be renewed or renovated over the next years. Besides every year there will be 30 to 50 new wooden barrels.
Due to a consistent vintage by hand only the best grapes are selected for our wines, creating the basis for a high quality. Through the purchase of an ultra-modern seeder (‘egreneurs’), that is also used at the best-known bordeaux-vineyards, we are able to deliver the grapes nearly complete from leaves and stipes. Thus the unwanted bitter substances of the wines are eliminated and extremly harmonic and high-quality wines can be generated.
We do even not accept compromise. Only the best wines are worthy of the name Moyau.
